This year I decided to do something different. I decided to cook pumpkin. So I showed Viki how to cook pumpkin in between my husband’s panic attacks. First I made a pumpkin soup. It is an Uzbek recipe with beans, vegetables, and pumpkin. It was good, but my husband had to add meat to it. We are definitely not vegetarians!
I then prepared pumpkin to put in desserts. I heated the oven to 325 degrees and cooked the pumpkin pieces for about an hour until they softened. Then I took the white part and put it in a blender. Now I can make pumpkin cookies and pumpkin bread. I don’t like pumpkin pie unless it is made with the fake stuff.
