From the Ambar Laboratory: Gluten Free Egg Free Cake

This is what I did and here are my notes- This is my own recipe!!

Dry Ingredients
3/4 cup of oat flour
1 cup tapioca flour
1/4 cup of milled or ground flax seed
1/2 scoop of protein shake powder
1 tsp salt
2 tsp baking powder
1/2 tsp baking soda

Wet Ingredients
1/4 cup of Chia Seeds in 1 cup of hot water (note: put seeds in blender for 1 minute and sift them through a sifter and then add them to the water. Then the cake won't be too crunchy)
1/4 c of honey
1/2 cup almond milk
1 cup of berries
1/4 cup of sunflower seeds (maybe only a couple of tablespoons, it really was too crunchy)

The only change would be to put in a tad bit more salt and no berries on top. The cake held together well where there were no berries on top. It tastes more like a health bar than cake and I liked it so next time I would put more nuts and less fruit. I guess if you are more of a sweet person than salty you could add more fruit or even some chocolate chips. Again, this is my first time experimenting with this. I am curious about using chia seeds in cooking. And yes it is a great thing to eat when you need energy. I think I need to add more flour too.

STUFF Clogging My Mind

I haven't blogged in a while. I never made it big in blogging and I never found an audience. I gave up and instead used Twitter as a way to express myself. I primarily used Twitter for about four years and even had my own little community. I had a few major retweets but was never famous or anything. It was popular last year to say that 2016 was the worst year ever! It was a very strange year for me! I went through many challenges, new baby, c section, deployment, teenagers, a move, and ended the year losing my grandfather, I went into a deep depression and realized that I was spending sometimes 6-8 hours arguing with people on Twitter. I knew that couldn't help my depressed mood so I decided one day to quit. By day three I felt like a new person. I had more energy and I no longer felt hopeless. Instead of wast…

Writer's Block

I usually have great ideas to write about especially if I am not under any pressure. Writer's block is horrible. I've had it at times, especially when I am busy or distracted. It's rare that it happens to me. 
What if I finally published a novel? It became popular and fans wanted a sequel. My anxiety would kick in like a huge block of ice, blocking my flow. What if I disappoint my fans? What if I can't repeat my previous success? Doubt will eventually lead to writer's block. Years go by and I still haven't published anything. Everyday I open up my computer and stare at a blank screen. I distract myself by going to Reddit or Twitter and discuss things like feminism in Star Wars and the worst sunburn I've ever had.
