2 1/2 Pounds of Chicken Breast
Because my husband is in the Army Reserves we get a great deal on meat and poultry. We bought 2 1/2 pounds of chicken breast for under $5. I chose chicken breast because there is a lot more meat than in the cheaper parts of chicken like thighs and legs.
I baked the chicken breasts in the oven. Then I took them out and cut the breasts into pieces. I put some chicken in a salad, in a casserole, mixed some with rice for the kids, and put some in spaghetti sauce. This fed our family for three days. I think this is also a great idea if you have to make meals for someone who is sick or having a baby. What can you make with 2 1/2 pounds of chicken?

Try chicken cordon bleu or kiev or florentine with those leftover chicken breasts!
