Extra Pork roast?

Brunswick Stew is a famous southern recipe and a delicious way to use your extra pork roast leftovers. It also tastes good with chicken. I tried this recipe from a recipe in Georgia where supposedly the best Brunswick stew is made and where they have Brunswick Stew competitions.

Sauce:
In a 2 quart sauce pan melt a cup of butter then add
1 3/4 cups of ketchup
1/4 cup of yellow mustard
1/4 cup of white vinegar

Add:
1/2 tablespoon chopped garlic
1 tsp pepper
1/2 oz liquid smoke (I didn’t use this but I think this is the secret ingredient)
1 oz worcestershire
1 oz hot sauce (again optional)
1/2 tablespoon lemon juice

Blend then add
1/4 cup brown sugar
stir and simmer 10 minutes

Then make the stew:
in a 2 gallon pot over low heat melt 1/2 lb of butter
then 3 cups of chopped potatoes
1 cup of diced onion
2 cans of chicken broth
1 lb of your leftover bbq pork (some people may call it pulled pork)

Bring to a boil then simmer until potatoes are near done
then add green peas
2 cans of stewed tomatoes
The prepared sauce
1 can lima beans (I used black eyed peas)
1 can of corn
SLow simmer for 2 hours

It looks complicated but it was really easy to make. I made one Saturday morning and it was delicious. I added a little more hot sauce. The cool thing about Brunswick stew is that you don’t need to follow the recipe strictly. You can mess around with it to make it the way you like. I would like to hear your variations.
