National Egg Month
This month is national egg month. Eggs are healthy and a great way to get protein. I love to make scrambled eggs and omelets. My husband loves fried eggs. My favorite way to eat eggs is Farmer’s Breakfast.
Farmer’s breakfast is easy to make and very filling. It can be eaten for dinner as well and is a great meal to make if you have nothing else to cook.
I just boil 2 potatoes with the skin on for 30 minutes. While the potatoes are boiling I chop up onions, green pepper, and ham. I saute first the onions, then the peppers, then ham. By then the potatoes are ready. I peel them and cut them up into half circles. I fry the potatoes until brown and add spices. I beat 5-6 eggs and add a teaspoon of milk and seasoned salt to the egg mixture. I pour the egg mixture on top of the veggies and ham and cook until eggs are done.
A good dessert to make with eggs is Orange Custard
